Recipe of the Week. Mom's Southern Potato Salad.

Folks, this is a good one... This is a simple and tasty potato salad recipe that everyone gobbles up fast. Just 4 ingredients, this recipe makes A LOT of potato salad, but you can pretty much half or double it depending on your party size. Everything is "by taste". Just add more relish if you like relish, or add more salt if you want more salt. Happy Summer!

5 lb. bag of baking potatoes or Yukon Gold potatoes
6 eggs
1 10 oz. jar of sweet pickle relish
1 18 oz. jar of low fat or light Kraft mayo

Peel your potatoes, cut in to cubes and boil until soft but firm. Let cool. Boil your eggs. Let cool. Peel your hard boiled eggs and either chop them up or put in a food processor. Start with your boiled potatoes and add half of your jar of mayo, half of your jar of relish and half of your eggs. Salt and pepper to taste. Keep adding your mayo, relish, eggs, salt and pepper until you get the taste and consistency you want.
